The micro-brewery l'Apaisée has been founded in 2015 in Geneva. Whenever possible, we only use organic raw materials and apply a sustainable development approach based on the principles of circular economy. We produce beer according to our taste and mainly two kinds:
Dry and hoppy ales, mainly IPAs, conditioned in 33cl bottles and 20l kegs. Oh yes, I almost forgot, we also produce rich and strong imperial stouts.
Wild beers of mixed fermentation. These beers are often sour and/or funky. They are aged in oak barrels and foeders with micro-organisms such as brettanomyces and lactic acid bacterias. These beer require a longer fermentation period that lasts between 6 months and 2 years.
